Is the Great Jones Holy Sheet the Best Nonstick Sheet Pan for Easy Cleanup?

6

I used to scrub pans until my knuckles were raw. Then I got the Holy Sheet from Great Jones. Now, I rarely break out the steel wool.

It has been three months since I swapped my standard baking sheets for this specific model. The results were surprising. Mostly good. But with some trade-offs.

As a food editor with fifteen years in professional kitchens, I have tested nearly every vessel in the drawer. I develop recipes daily. This means I know my gear. I know when a pan is lying to me. The Holy Sheet claims to be nonstick. I wanted to see if that held up without the safety net of parchment paper.

What exactly is the Great Jones Holy Sheet?

The product is an aluminized steel half sheet pan. It measures 18.5 by 13 inchs. That is standard. The coating is where things get interesting. Great Jones markets it as free of PFOA, PFAS. Also PTFE, lead, and cadmiun. These are the chemicals usually associated with nonstick cookware. Some people worry about them. This pan says otherwise.

The price is $45. That is higher than your average supermarket baking sheet. You pay for the coating. You also pay for the five bright colors. It looks nice. It feels substantial. The manufacturer says it is oven safe up to 450 degrees F. They call it dishwasher friendly. I would not bet on that.

How does it perform without parchment paper?

My test was simple. I cooked everything on bare metal. No foil. No paper.

I baked cookies. I roasted chicken thighs. I made sheet pan dinners. I even baked pizza. In the past, I would line every single one of those tasks. Why? To avoid the scrubbing. The Holy Sheet eliminated that step.

The nonstick surface prevented even melted cheese from bonding to the metal.

Usually, burned cheese requires soaking. Sometimes steel wool. Here? A plastic scraper did the trick. Food that looked like it had fused to the surface simply wiped away. It was satisfying.

Why you might still need a regular baking sheet

Convenience costs something. The Holy Sheet is not indestructible.

My old uncoated sheets? I can use metal utensils on them. I can broil at 550 degrees F. I can twist them in a knot and they will survive. The Holy Sheet does not offer that freedom. Metal utensils are banned. High heat is discouraged.

And then there was the warping.

The first time I used it, I roasted chicken at 425 degrees F. The pan warped. Just slightly. It snapped back to shape at room temperature. But it did not feel rigid. My ten-year-old stainless steel sheets have never done that. They are rock solid.

I also noticed wear on the bottom coating after a few uses. The oven racks scratch it. The top surface? Pristine. Food contact area is fine. But the aesthetic of the bottom is going. Fast.

Should you buy a nonstick sheet pan?

It depends on your priorities.

If you hate scrubbing, buy the Holy Sheet. It works. The food releases easily. You save time on cleanup. It is great for cookies. Great for easy sheet pan meals. It is stylish enough to leave out on the counter.

If you like high heat, forget it. If you use metal tongs constantly, look elsewhere. If you want a pan that lasts twenty years, stick with aluminized steel.

The Great Jones Holy Sheet is not a replacement for every pan. It is a specialist. A good one. Just don’t expect it to be tough.

Will I stop using my old pans? No. But for lazy nights? The Holy Sheet gets the first look.

Maybe that is enough.
